The penultimate dish for the Noche Mexicana should be whole, burnt corn tortillas. This carbonized tortilla is purported to help with digestion from having eaten and drunk too much.

Folklore! Has no scientific basis. However, the tortilla should be served with "salsa borracha," lime juice and salt to taste. The above, now being well digested, makes room for the last dish.
